I started this blog...

as a way of compiling all my families favorite recipes all together in one place.
My daughter asked me if I would write down a certain something I make so
she has it when she grows up and has a family. I thought that was a good idea,
so I decided to combine all our favorites and make one big book. It will be a
work in progress and a way for me to ORGANIZE all the recipes stashed in
the cupboard. And I've realized, I like taking pictures of food!

Stuffed Shells

1 (12 oz.) pkg. jumbo shells (32-33 shells)
1/2 lb. ground beef, cooked and drained
2 c. (1 lb) Ricotta cheese
1/3 c. + 2 T. grated parmesan cheese
1 egg
1/2 t. parsley
1/4 t. oregano
1 t. salt
dash of pepper
3 c. (28 oz.) spaghetti sauce
1 c. shredded mozzarella cheese

Cook shells according to package directions. Drain well and cool in a single layer on wax paper to prevent sticking together. Mix together Ricotta cheese, 1/3 c. parmesan, egg, and seasonings. Spread a little bit of sauce in the bottom of a 9x13 pan. Fill shells with mixture and place in a single layer in pan, open side up. Sprinkle with mozzarella cheese. Pour remaining sauce on top and sprinkle with remaining parmesan. Cover and bake at 350 degrees for 45 minutes. Fills 32-33 shells.
