I started this blog...

as a way of compiling all my families favorite recipes all together in one place.
My daughter asked me if I would write down a certain something I make so
she has it when she grows up and has a family. I thought that was a good idea,
so I decided to combine all our favorites and make one big book. It will be a
work in progress and a way for me to ORGANIZE all the recipes stashed in
the cupboard. And I've realized, I like taking pictures of food!

Twiced Baked Potatoes

6 large baking potatoes
1/2 c. milk
3 T. butter
1/2 c. shredded cheddar cheese
salt and pepper to taste
bacon bits, optional
chives, optional
sour cream, optional

Preheat oven to 350 degrees. Wash potatoes. Pierce skin with a fork once or twice. Bake at 350 degrees for 1 hour. Let potatoes cool slightly. Cut in half and scoop out pulp within 1/4 inch of the shell edge. Mash the pulp with milk, butter, salt and pepper. Stuff shells with mashed pulp mixture. Sprinkle with cheese. Place potatoes on a baking sheet and bake at 350 degrees for 15 minutes or until cheese is melted and bubbly.
