I started this blog...

as a way of compiling all my families favorite recipes all together in one place.
My daughter asked me if I would write down a certain something I make so
she has it when she grows up and has a family. I thought that was a good idea,
so I decided to combine all our favorites and make one big book. It will be a
work in progress and a way for me to ORGANIZE all the recipes stashed in
the cupboard. And I've realized, I like taking pictures of food!

Salsa Omelet Pie

Omelets are my fav and my kids like them, too. I love using my bottled salsa in this recipe.
1/2 c. salsa
1/2 c. Monterey Jack cheese, grated
1/2 c. cheddar cheese, grated
6 eggs
1/2 c. sour cream
Tomato slices and chopped fresh cilantro or parsley, optional

Pour salsa into a lightly greased 10 in. pie plate or quiche dish. Sprinkle with cheese; set aside. In a blender, process eggs and sour cream until smooth. Pour over cheese. Bake at 375 degrees for 30-35 minutes or until knife inserted near the center comes out clean. Let stand 5 minutes before cutting. Garnish with tomatoes, cilantro, parsley {or top with anything you like; avocados, bacon... that's the great thing about omelets}
