I started this blog...

as a way of compiling all my families favorite recipes all together in one place.
My daughter asked me if I would write down a certain something I make so
she has it when she grows up and has a family. I thought that was a good idea,
so I decided to combine all our favorites and make one big book. It will be a
work in progress and a way for me to ORGANIZE all the recipes stashed in
the cupboard. And I've realized, I like taking pictures of food!

Swirl Cheesecake

This cheesecake is not only pretty, but creamy and delicious.

2 (8 oz.) pkgs. cream cheese, softened
1/2 c. sugar
1/4 t. vanilla
2 eggs
1 graham cracker pie crust
1 (21 oz.) can pie filling

In a mixing bowl, beat cream cheese, sugar and vanilla until smooth. Add eggs, beating just until combined. Pour into crust. Spoon small amounts of pie filling (about 1/2 cup) by teaspoonfuls on top. Using a knife, cut through cream cheese mixture to swirl the pie filling. {Be careful not to draw the blade through the filling too often or they'll blend and you'll lose your pretty pattern.}
Bake at 350 degrees for 40 minutes or until center is almost set. Cool. Chill for 2 hours. Top with remaining pie filling.
