I started this blog...

as a way of compiling all my families favorite recipes all together in one place.
My daughter asked me if I would write down a certain something I make so
she has it when she grows up and has a family. I thought that was a good idea,
so I decided to combine all our favorites and make one big book. It will be a
work in progress and a way for me to ORGANIZE all the recipes stashed in
the cupboard. And I've realized, I like taking pictures of food!

Baked Lemon and Parsley Salmon

We love salmon and I try to incorporate it in my meal planning once a week for health benefits. This is one of several ways we like it. The slight hint of lemon makes this salmon dish fabulous!
1 t. garlic powder
6 T. olive oil
1 t. salt
1 t. black pepper
1 T. lemon juice
1 T. fresh parsley, chopped or 2 t. dried parsley
1 (1 1/2-2 lb.) salmon fillet or 6 salmon pieces

Place salmon fillet in glass baking dish or a Ziploc bag. Mix all the ingredients together and pour over fillet. Cover with plastic wrap {if using baking dish}. Marinate in refrigerator for 1 hour, turning occasionally.
Place fillet (skin side down if not skinned) in aluminum foil, cover with marinade and seal. Place on baking sheet and bake at 375 degrees for 45 minutes, until easily flaked with a fork.
