I started this blog...

as a way of compiling all my families favorite recipes all together in one place.
My daughter asked me if I would write down a certain something I make so
she has it when she grows up and has a family. I thought that was a good idea,
so I decided to combine all our favorites and make one big book. It will be a
work in progress and a way for me to ORGANIZE all the recipes stashed in
the cupboard. And I've realized, I like taking pictures of food!

Sour Cream Chicken Enchiladas

2 c. cheese
1/2 c. chopped onion, optional
3 chicken breasts cooked and shredded
1 pint sour cream (2 cups)
1 can cream of chicken soup
1 soup can of milk
1 can diced green chilies
2 dozen corn tortillas

Mix cheese, onion, meat and sour cream. Set aside. Blend the soup, milk and chilies in blender; mix well. Soften tortillas in hot oil. Fill with meat mixture; roll and place in baking dish. Pour chili mixture on top. Bake at 350 degrees for 35 minutes.
