I started this blog...

as a way of compiling all my families favorite recipes all together in one place.
My daughter asked me if I would write down a certain something I make so
she has it when she grows up and has a family. I thought that was a good idea,
so I decided to combine all our favorites and make one big book. It will be a
work in progress and a way for me to ORGANIZE all the recipes stashed in
the cupboard. And I've realized, I like taking pictures of food!

Apple Muffins

I got this recipe from my sister. My siblings and I use to beg her to bake these on Saturday mornings for us when we were all home. I love the nutty, sugary crumb topping on top. Pour a glass of milk and enjoy.
2 eggs
1 c. milk
1/2 c. oil
3 c. flour
1 c. sugar
4 t. baking powder
1 t. salt
1 t. cinnamon
2 c. grated apples

Beat eggs. Mix in rest of ingredients just until moist. Pour batter in greased muffin tin 1/2 full.

Topping:
1/2 c. brown sugar
3/4 t. cinnamon
1/2 c. chopped nuts (optional)

Mix together and sprinkle 1 T. on top of each muffin. Bake at 400 degrees for 18-20 minutes. Yields: 20 muffins
