I started this blog...

as a way of compiling all my families favorite recipes all together in one place.
My daughter asked me if I would write down a certain something I make so
she has it when she grows up and has a family. I thought that was a good idea,
so I decided to combine all our favorites and make one big book. It will be a
work in progress and a way for me to ORGANIZE all the recipes stashed in
the cupboard. And I've realized, I like taking pictures of food!

Cornflake Clusters

  • 1/2 c. Corn Syrup1/2 c. Sugar2 T. unsalted Butter1/2 c. Peanut Butter 1 t. Vanilla1/4 t. Salt3 c. Cornflakes 
    Line a baking sheet with parchment paper.
  • In a saucepan over low-medium heat, combine sugar, corn syrup, butter and peanut butter. Stir, and bring to a boil. Once it boils, immediately remove from heat and stir in vanilla and salt.
  • GENTLY fold in the cornflakes so you don’t break them.
  • Spray a cookie scoop with non stick spray and use it to scoop the clusters onto the parchment paper.
  • Allow them to set for 30 minutes.
