I started this blog...

as a way of compiling all my families favorite recipes all together in one place.
My daughter asked me if I would write down a certain something I make so
she has it when she grows up and has a family. I thought that was a good idea,
so I decided to combine all our favorites and make one big book. It will be a
work in progress and a way for me to ORGANIZE all the recipes stashed in
the cupboard. And I've realized, I like taking pictures of food!

Enchiladas

These enchiladas are one of Ryan's favorite meals.
1 pkg. medium sized flour tortillas
1 sm. can sliced olives
1 sm. can diced green chilies
1 (12 oz.) bottle mild salsa
1/2 c. shredded cheese
1/2 c. shredded monterey jack cheese
1 lb. hamburger
1 (10 oz.) can mild enchilada sauce
1/4 c. onion, chopped
sour cream to garnish

Cook meat, drain. Add olives, chilies, salsa, cheese and onion and mix together. Spoon mixture into tortilla, roll and place on a greased 9x13 pan, seam down. Cover with sauce and more cheese, if desired. Bake at 350 degrees for 30 to 40 minutes. Serve with sour cream, if desired.
