I started this blog...

as a way of compiling all my families favorite recipes all together in one place.
My daughter asked me if I would write down a certain something I make so
she has it when she grows up and has a family. I thought that was a good idea,
so I decided to combine all our favorites and make one big book. It will be a
work in progress and a way for me to ORGANIZE all the recipes stashed in
the cupboard. And I've realized, I like taking pictures of food!

Zucchini Casserole

6 zucchini (6-8 in. long) sliced lengthwise and parboiled 5 minutes
1/2 lb. hamburger, cooked and crumbled
1 pkg. spaghetti sauce mix ( I like Italian Style)
1 6 oz. can tomato paste
1 t. oregano
2 t. parsley flakes
Grated mozzarella cheese (however much you want)
Parmesan cheese
1/4 c. butter
2 c. bread crumbs (I toast 6 slices of bread and then crumble)

Prepare sauce mix according to directions on package; add oregano, parsley and cooked hamburger. Melt butter and add bread crumbs. Put zucchini in bottom of casserole dish. Pour sauce mixture on top. Sprinkle on bread crumbs and cheese. Bake at 375 degrees for 30-45 minutes.

When I first tried this recipe it didn't call for meat. We weren't too crazy about it, so the next time I made it I added hamburger, since my hubby likes meat in everything. We liked it much better. Great way to use up all the garden zucchini!
